Ingredients:
- 350g
chicken drumstick

120g pickled ginger
Marinate:
Salt,
sugar, light soya sauce, curry power, water, cornstarch.
Sauce
(mix well) :

150ml pickle ginger juice

2 tbs pinneapple jam

1/4 tsp salt

1/2 tbp fresh lemon juice
Method:

Rinse the chicken drumstick and cut into pieces. Season with marinate,
mix well. Marinate for about 30 min. Deep fry into hot oil until
golden brown. Remove and drained.
- Heat
up a little oil in the preheated wok, pour in sauce mixture and
bring to a boil. Then, place in pickle ginger dices and prefried
chicken pieces, stir fry until well coated with the sauce or slightly
dry. Dish out serve with hot rice.
