Chicken Pasta with Papaya-seed Dressing

Papaya seeds have a peppery flavor and are edible on thier own. Usually they're eaten in a dressing, as is made here. This simple papaya seed dressing turns any pasta dish into a gourmet delight.


  • bow-tie pasta or anykind that you prefer
  • bell pepper (any colour you want but at least two colour) cut into thin strips
  • roasted chicken breast, cut into long strips

Papaya-seed dressing:

  • 2 tbsp papaya seed
  • 3 cloves garlic, minced
  • 3 tbsp chives, minced
  • 1/2 cups fresh squeexed orange juice
  • 2 tbsp olive oil (can use peanut oil or corn oil)
  • 1 tbsp cider vinegar or balsamic vinegar
  • salt to taste


  1. Combine all the dressing ingredients and put in a sealed container. Fridge for 30 minutes or so
  2. Cook the pasta according to package directions. Drain and rinse with cold water to prevent sticking. Place pasta and bell pepper in a serving bowl. Mix thoroughly with dressing. Toss in chicken. Season with salt and pepper if needed.
